Cold dark meat sucks, unless of course you braise the legs to begin with, in which case you have the most delicious turkey ever. I might actually beer-braise the legs separately this year. Haven't decided yet. Key to moist turkey: dont overcook it!!! Pull it at 160 to be on the safe side and let that sucker rest for 15 minutes before you slice it.
