    For any of you that have been to Rochester or have had a true Garbage plate, I learned how to make Nick Tahoe's hot/meat sauce he uses and OMG it is the best. As I'm typing this I'm on the phone telling my girlfriend to pick up hotdogs so I can have some of it tonight.

    Ok, what goes well with Poutine? I'm up here in Canton, NY, (not too far from Ottawa!) tonight and my son is hitting the curds and gravy.

    Unfortunately we missed the St. Lawrence U. college hockey game last night. Win or lose, that would have been a blast.

    Doing some serious cooking this weekend. My friend is having a game roast tonight. Might just bring some roasted squash. Otherwise..making za'tar spice mix and dukkah spice mix for some other stuff..

    French Onion Soup w/ 5 hour onions,shallots,garlic
    Zat'ar Spiced Leg of Lamb w/ Toasted Farro and Buttercup Squash
    Dukkah Dusted Apple Cake

    and then toasting all the squash seeds to make pepitas. i love fall.

    Grabbed some wild boar bacon last week along with some double cut Berkshire chops.. Fucking awesome.

    No idea what type of game. Pheasant I would guess.. who knows whaat the hell this guy has in store.

    Where in the hell do you find wild boar bacon. I've never come across boar at all. You brine them suckers?

    No.. I brined some a month ago. Turned out really well. Way better than a BS marinade off the shelf. These bad boys were partially smoked..

    Get the boar at Black Angus Meats, easily found on the web.. I passed up his Musk Ox roast though lol

    lol musk ox. Sounds terrible. Just curious.. how did you come across the site? I've been considering starting an online food shop or at least doing my "capstone" project based on the idea of it.

    Ridiculous. So I ended up cooking at a bond fire last night. No lights. No containers or utencil. A slanted stump as my work surface. 1 cast iron pan and a dutch oven.

    Fettuccine alfredo with shrimp, crawfish, broccoli, and onions. Then I deep fried gator nuggets. All over the fire. About as redneck as you can get.
