Dark meat. Save the white meat for sandwiches. Cold dark meat sucks, unless of course you braise the legs to begin with, in which case you have the most delicious turkey ever. I might actually beer-braise the legs separately this year. Haven't decided yet.

 

Key to moist turkey: dont overcook it!!! Pull it at 160 to be on the safe side and let that sucker rest for 15 minutes before you slice it.
